Following the ceremony, the double doors were opened wide, so friends and family could line the ramp all the way to the edge of the lagoon. There, standing majestically at the end of a green gondola, was Adriana’s childhood friend Giulia, a champion of voga Veneta, or Venetian rowing, ready to take the couple to the other side of the island for lunch.While Giulia rowed Adriana and Thom around the island, the rest of us walked across it to Trattoria Da Romano, where Adriana’s family have celebrated for lifetimes, and it was completely given over to our euphoric wedding party. I am sure I would remember all seven courses (several of which involved more than one dish) even if I didn’t have the menu memento stuck to our fridge...

The burgers themselves are a simple food processor job; if you don’t have one, use chicken mince and make sure you really mix in the curry paste and courgette by hand. The accompaniments are also key: the lime-pickled shallots, the abundance of herbs and the creaminess of the mayo all work so well together. Not many salads come with a byproduct that can be transformed into a delicious cooling drinkIt is the time of year when the fruit syrups get moved to a more accessible shelf at our local supermarket. They have a range of eight to 10 flavours, but the two that dominate are mint and orzata, luminous green and cloudy white syrups respectively, that need diluting with fizzy water and maybe topping up with ice. I have mentioned orzata here before, how popular it is in Italy and how the name means a drink made from orzo (barley), and also how at some point the barley was replaced by almonds; then, at another point, the almonds were replaced by deacidified benzoin, which is a balsamic resin obtained from trees of the genus Styrax from south-east Asia. Deacidified benzoin is actually delicious and I become dependent on orzata at this time of year, and the sound of the ice clanking against the side of the glass as I walk my cold, cloudy drink back to my hot desk is the sound of summer.Howeve...

Every now and then, I join him and we then walk for a bit (there is nothing like a caffeine-baba spring in your step), and congratulate each other for not smoking while both wishing that we had a cigarette.In Poland, the word “baba” can refer to a variety of baked goods, and one in particular is made with rye flour and sweet wine. Baba al rum came about thanks to the greediness of twice king of Poland Stanislaus Leszczyński, who, exiled in Lorraine, thought his kougelhopf too dry, so asked for it to be soaked in rum. This inspired his pastry chef to perfect the dish and, in turn, subsequently inspired other pastry chefs, like baba dominoes. It is a project, though, and remember to chill the eggs.
